Family Cooking Ideas: Italian Meatball Recipe

The kitchen is a place where family members can cook and eat together and share about their day. However, sometimes it’s difficult to prepare a meal that the whole family will enjoy.

Chef Michael Laukert, a renowned chef, husband and father, uses his kitchen to make delicious meals as well as memories cooking with his young son. Chef Michael developed an Italian meatball recipe that the whole family is sure to enjoy eating as well as making. He put a spicy twist on the traditional recipe by adding Volpi Calabrese Salami, a garlic-rich dry cured Italian meat from Volpi Foods. Chef Michael shares his recipe for these unique Italian meatballs below.

Ingredients:
½ lb Pork, ground
½ lb Veal, ground
1 lb Beef, ground (80/20 blend)
1/2 lb of Volpi Calabrese Salami, diced into small pieces
1 tbsp Garlic, fresh, minced
2 tsp of sea salt
½ tsp Black Pepper, fresh ground
1 Large Egg, lightly beaten
2/3 cup of grated Parmesan cheese
2 tbsp of Italian Parsley
½ cup Milk
1/2 cup of bread crumbs
3 tbsp of fresh onion, minced
2 oz Olive Oil for sautéing meatballs

Place all ground meats in a large mixing bowl. Add the rest of the ingredients to this mixture. Mix together well. To make sure the seasoning meets your taste, form a small patty and cook in a small saute pan. Once seasoning is proper, begin to form meatballs.

Here is where you can have family members help out. Take approximately 2 to 3 tablespoons of the meatball mixture and roll in your hands to form meatballs. From this mixture you will get around 24 golf ball-sized meatballs.

Heat the olive oil in a large sauce pot over medium to high heat. Once the oil is hot, add the meatballs in batches to cook. Allow each part of the meatball to become golden brown before turning to cook all the sides.

Once these Italian meatballs are cooked, you can add them to your favorite spaghetti recipe. Or, place the meatballs on a loaf of Italian bread, and cover with marinara and provolone cheese for a hot meatball sandwich. Or, you could serve them as appetizers at football watching parties or holiday gatherings. Simply place them in a slow cooker or crock pot, cover with marinara sauce, and allow your guests to help themselves using forks or toothpicks.

Besides being a guaranteed crowd pleaser, this Italian meatball recipe can be made in advance. After you’ve cooked all the Italian meatballs, place them in a freezer bag and freeze for up to two months! They will be perfect on a busy night when you don’t have time to cook, or even when you need a last minute holiday party dish. You’ll thank yourself later when you re-heat and serve these delicious Italian meatballs!
